The Cave de KIENTZHEIM-KAYSERSBERG, founded in 1955, gathers 130 winegrowers running their vineyards in the valley of KAYSERSBERG. This represents an area of 170 Haharvesting an average of 12.500 Hl, principally from  KIENTZHEIM, KAYSERSBERG, SIGOLSHEIM and AMMERSCHWIHR. The winery ranks among the Top 20 wine producing companies in Alsace : it was elected Best Wine Producer by IWSC 2010.

The main goal of the winery is to enhance the typicity of its wines : Several factors contribute to it :

  • The geological diversity of the soils (five different structures)
  • The due south exposure of its renowned slopes such as :
  • The SCHLOSSBERG the first delimited Grand Cru d’Alsace in 1975, joined by the Grands Crus FURSTENTUM and MAMBOURG, as well as the renowned KAEFFERKOPF of Ammerschwihr newly upgrated to Grand Cru in 2007
  • The Lieux-Dits (localities) ALTENBOURG, VOGELGARTEN and PATERGARTEN

  • The range of traditional Alsace wines is completed in vintage years by the “Vendanges Tardives “(Late Harvest) and “Selection de Grains Nobles” (Selection of Noble Grapes).

  • The winery also produces since 1981 Crémants d’Alsace (Blanc de blancs, Rosé and Blanc de Noirs).
  • The basic process applied is the same for all the wines produced according to the “méthode traditionnelle”,
  • The differentiation however results from the grape variety, the quality of the “terroirs” (soils), the skills of the winemaker and the balance of the blend,
  • Moreover, the bottle fermentation compulsorily set to nine months, takes place in fact during 14 to 20 months, in order to give to the CREMANT more delicacy and distinction.

V i n i f i c a t i o n

Since 1987, the winery is equipped with a state of the art electronic grape reception, allowing a very strict selection of the grapes, not only by grape varieties, but also according to quality criteria as well as to different  “terroirs”, “lieux-dits” and “grands crus”. The grapes mainly issued from the valley of KAYSERSBERG are exclusively handpicked. The winery is equipped with reception desks dedicated to whole harvests essentially used for the Vendanges Tardives, the Grands Crus and the Crémant.

The pressing is operated by six pneumatic presses. In order to preserve the aromas and freshness of the wines, the fermentation takes place in stainless steel vats with temperature control. The total capacity of the 150 vats reaches 30.000 Hl, including a micro-vat room with 17 stainless steel vats sizing 5 to 40 Hl each, allowing the wine-making of  “terroirs” et “specialty“ wines.

B o t t l i n g – S t o r a g e

Since 1993, the winery has a bottling hall which meets the European hygiene standards. The modernization of the bottling line allows to process 3 Million bottles per year. The majority of the wines issued from     « terroirs » of the valley of KAYSERSBERG will reach their fullness in the bottle after a few years. Therefore the winery built underground cellars in 1970, before the compulsory bottling requirements for Alsace wines (Décret of July 1972) in order to avoid recently bottled wines to be marketed. A second phase was completed in 1984, allowing the winery to store approximately 2 Million bottles in the best conditions as possible.
